This the is the kind of easy summer cake perfect for lazy afternoons. It’s filled with fresh blackberries, but you can substitute blueberries or raspberries, whatever you can get best locally. Financier are a classic French cake made up of brown butter and ground nuts and traditionally baked into tiny individual cakes. The not -too -sweet flavor and the texture of this cake makes it a perfect morning or afternoon snack with coffee, but dressed up with whipped cream and berries it becomes an elegant plated dessert.
Next week marks the one year anniversary of my Substack! To celebrate I’ll be posting vanilla almond birthday cake ( if you are from New Orleans, that’s ‘wedding cake”) and have some of the other bakery favorites posting soon. And yes, the decorated sugar cookies recipe will be published later this summer.
