Everyone I’ve ever made this olive oil cake for has been blown away by how delicious it is- flavorful, moist and not too sweet. It is also incredibly easy. Whisk the cake ingredients together in a bowl, bake and drizzle over a simple glaze. I love blood oranges for their flavor and the color, but if they aren’t available or out of season you can substitute any other citrus fruit. Serve slices on their own, or with whipped cream, or mascarpone cream.
