

Coconut is a love it or hate it cake flavor. I absolutely love it and this is one of my favorite cakes, and has been my own birthday cake many times. A lot of coconut cakes are too sweet, dry, and barely taste of coconut. I eliminated the sweetened coconut flakes that can make it so syrupy and added three other kinds of coconut, and a not too sweet cream cheese buttercream.
Coconut cake is great all year round, and beautiful for spring events topped with fresh flowers, but it’s snowy appearance make it perfect for your holiday dessert table.
At the bakery we made towering cakes, but this smaller one is more manageable at home. Because the entire cake is covered with the coconut flakes, this is a great option for those who don’t feel confident decorating a layer cake.
