Happy one year birthday to this substack! When I started this I was a year out from selling my bakery. I wanted to organize and share my recipes, and I wasn’t sure what was coming next for me. One year later I have a new career (contact me to plan your travel) and many, many more recipes to publish, including some of the long time bakery favorites. Wedding cake (vanilla almond white cake) has always been a popular cake flavor in New Orleans and this was my birthday cake every year, covered in buttercream ghosts and pumpkins for my Halloween birthday. The old school bakeries used shortening and artificial flavors back then. Updating it with butter and natural vanilla and almond flavors is a huge improvement while still maintaining the traditional flavors.
The suggested cake design is a great way to make a festive cake without a lot of effort or cake decorating tools. Feel free to try your hand at a more elaborate design if you want. You may need to make a bigger batch of buttercream however, if you are doing a lot of piped designs.
