When I was playing around with new ice cream sandwich flavors and tried out a king cake variation, I had no idea it would somehow come together so well, be so popular, or go viral, as they did when we first sold them in the bakery. This is one of those recipes that seems a bit complicated but is actually fairly simple, especially if you use store bought ice cream. Whip up a batch during carnival season and individually bag them and keep them in the freezer-you will always have a taste of king cake when you or your guests want it.
