Rum cake was a dinner party staple in the 70’s and 80’s and I have fond memories of sneaking slivers of the booziest spots where all of the glaze had soaked. When I decided to recreate it at the bakery, I looked at some old recipes and realized it traditionally had been full of 70’s ingredients like box cake mix and instant pudding mix. I started from scratch and made this buttery brown sugar buttermilk version. It’s still completely soaked in the classic cooked rum glaze.
