If you tell people you are a pastry chef, pretty soon after they will ask you to bake them something. When I was traveling in Africa this year, this was a little more challenging. New friends would ask me to bake something in a kitchen with limited ingredients and equipment. This was my go- to. It can be made by hand with just a bowl and spoon and adjusts well to substitutions. Also, it’s always a huge crowd pleaser. If you grew up eating pineapple upside down cake with canned pineapple and box mix cake, this will blow your mind.
